Gluten is a protein found in most cereals (wheat, barley, rye ...) including flour. For this reason, many people think that those who suffer from gluten intolerance should abstain from consuming all types of cereals.

On the contrary, there are other cereals perfectly compatible with a gluten-free diet, since they do not contain any. These cereals are:
  • Rice
  • Buckwheat
  • Amaranth
  • Quinoa
  • But
  • Millet
  • oat
  • teff

Thus, people intolerant to gluten can add these cereals to their diet. However, we must keep in mind that many other foods may contain gluten, either as a main ingredient or by contamination during processing. Among these foods, we can mention:
  • Beer
  • Pasta
  • sauces
  • Concentrated broths
